Dough chemistry and recipes for Classic Italian Pizza

Practical experience of dough mixing, dividing and handling, stretching and toppings.  Also training on wood gas and electric ovens

Expert and recognised Master Pizza Chef instructors teaching practical and theoretical componets of Classic Italian Pizza

Certificate of participation on successful completion of practical and theoretical exams.

Materials to Bring

Comfortable clothing and suitable for food preparation in a kitchen.

Notebook and pen

Dress Code

Participants must wear flat, closed toe rubber soled shoes for kitchen and food safety. Comforable clothing, minimal jewellery and long hair must be tied up.

Learn the art of pizza making with a professional pizza course presented by Scuola Italiana Pizzaioli - the Italian School of Pizza Makers. The Scuola Italiana Pizzaioli is the oldest and most prestigious pizza school located in Italy and will run its first course in Australia this December!

Gaining pizza chef skills will put you ahead of the game in the hospitality industry. Learn the science behind dough preparation, how to hand stretch pizza dough, choosing toppings, how to use a professional equipment, including Marana Forni rotary ovens, and all the tricks of the trade.

This course is open to all levels, no pre-requisite knowledge required and a great refresher course for those with experience.

Course runs from Monday 2nd to Friday 6 December 2019 - 40 hours in total, over 5 days. There will be 10 hours of theory and 30 hours of practice.

Students will sit an exam at the end of the course and will receive a certificate of participation.

This course will be held at William Angliss Institute, 555 La Trobe Street Melbourne.
