The Art of Culinary Smoking

The art of smoking is a magical process of infusing foods such as meat and seafood, but also spices, cheeses and vegetables with unique, complimentary flavours. In this class you will learn traditional and contemporary methods for hot and cold smoking, air-drying and preparation of speciality dishes.
