Chef Emma McKay extends her journey down the culinary road offering a higher level of skill, more challenging techniques and exciting new ideas. This course is about the detail, the flavour and the presentation.
Explore the techniques of producing a classic and modern patisserie.  Learn the secrets of creating and building gateaux, the flavour profile, the presentation and the combination of different textures.
Start with baking your own profiteroles and fill them with a divine pastry cream, then build a magnificent tower surrounded by caramalised sugar.
If you enjoy eating at any of the top patisseries around Melbourne, you are sure to enjoy this course making a range of the latest pastries and tea cakes.

The latest fashion in patisseries in Paris, Éclairs, are much more than a pastry with chocolate glaze and whipped cream. The 'new' Éclairs have decadent fillings, many textures, glazes and decorations that leave behind the old heavy version to convert them into a work of art.

This course is ideal for both the novice and those who want to hone their skills. All classes include a demonstration and then students move to hands-on learning.
Macarons are a delicious French delicacy; delicate but not too difficult to make when taught by our Patisserie chefs.
